Well I have to tell you which is the winner actually, I listen to two albums for some days now and it's really what I'm looking for, I'm blown away by:
Agalloch! A lot of different voices, a lot of acoustic guitar, epic moments, I like the production and the drums and guitars sounds (really important to me) and songs are quite long, composed in a progressive way!! Really melancholic too. It's beautiful, really great!! So I'm probably more into slow/doom stuffs...

If you're looking for that far off forrest feel, I would strongly recommend Pyramaze. They have 2 albums so far (and in a few months they'll release their 3rd, with Matt Barlow). Personally I like Melancholy Beast more, but Legend of the Bone Carver is by far the more epic one!
You should give them a try.

I wanted to thank people who talked about Agalloch! I'm actually buying all their albums!! It's exactly what I looked for!!
The other one I bought is Turisas "Battle Metal", fantastic! I'm about to buy the other album then. Now I'm looking for other bands like Turisas, I read some topics but the other "viking metal" bands sound less eclectic to me...
I listen to a lot of stuffs quoted here but I must admit that I'm not really into stuffs with only extreme vocals and/or too speed.

Very dark, doomy, folky metal that seems to come from a cold autumn/winter forest as the first snows are starting to fall.

You might try Moonsorrow. They're less viking-sounding though. More folky.

Yeah, that's true. But still, they're pretty folky. Anaon likes the "foresty" stuff, so I think he'd like them.
