Epic and/ or Intense Metal
I'm looking for some songs that have a really epic and intense sound. By that I mean having a slow and quiet intro and then slowly building up, becoming more intense and then just exploding into crushing instruments and vocals. Sorry if I wasn't able to explain it very well but is there anything you'd recommend?

While Heaven Wept - Vast Oceans Lachrymose
Altar of Plagues (Definitely)
Fen
Skagos
Wodensthrone
Sorry if that's a bit too much black metal.

Epic and Intense are usually two different things to me. If you want epic I would try Moonsorrow.

Sokyra Peruna's cover of "Honor and Blood" sounds like what you're after.
