That stuffed zucchini I showed above was definitely a meal, the mince can be any flavoured mince you prepared in any way. The only thing is if you want to use meat and the rest it does need to be a thick zucchini otherwise you need to scoop too much flesh out. Otherwise with a thinner zucchini make something like chopped up herbs and spices, grated cheese, small bits of tomato and bread crumbs. Cut the zucchini in half and scoop out the middle. Cook the zucchini in the microwave for a minute or so just enough to start the cooking process. Then take out and fill the hole with the mixture. Then put the zucchini in a hot oven for about 10 minutes, or under the grill for a few minutes. Quiches here are really just quick and easy meals, served in cafes etc not so much restaurants.
