If I believed in God, his music would resemble something similar to Lustmord.

The absolute best 5.1 music mix I've heard (so far) is Ayreon's "Actual Fantasy: Revisited"! Listen to it in a dark room, possibly with the TV showing the animated lyrics. It really envelops the listener! Arjen's really made use of all the speakers properly.

Pink Floyd - Dark side Of The moon
Insane Clown Posse - the Wraith. They really use the extra channels and push the audio everywhere.

I was never that impressed with the 5.1 mix of Metallica. Sounds like the stereo mix with some of the verbs sent to the surrounds. the stereo sounded better in my opinion.

pretty sure btbam's new one is in 5.1 and from what my roommate said, it's amazing. I'll find out when I move in next month. ;)

Dimmu Borgir "Death Cult Armageddon" DVD-Audio (already mentioned).
5.1 Surround is 24/48 lossless (MLP coding).

I agree that most metal loses a lot of oomph when put in surround sound
