Hey, I've actually heard one of those! (Twelfth Gate).

I haven't resolved my list yet, but it's likely to include such manly choices as Angra and Wuthering Heights. I'm pretty sure it will also include Mercenary and possibly Scar Symmetry. I'll try to remember to post it when I figure it out.

Off the top of my head (in no order):

Iron Maiden - A Matter of Life and Death
Katatonia - The Great Cold Distance
    Wolf - The Black Flame
Luca Turilli - The Infinite Wonders of Creation
    Motorhead - Kiss of Death
Pyramaze - Legend of the Bone Carver
Nocturnal Rites - Grand Illusion (2006 for N America)
    Dragonforce - Inhuman Rampage
Edguy - Rocket Ride (tho a bit dissappointing)
Blind Guardian - Twist in the Myth (see above)

Two others that I just got last week that probably would have made the list had I gotten them earlier and given them a proper listening by year end:
My Dying Bride - A Line of Deathless Kings
    HammerFall - Threshold
