Damage Incorporated has Death's Cosmic Sea for introductory music. When I looked at the credits I was disappointed that a (obviously garage-level) band with such a generic name wrote it, and assumed that the game developers did it.
Mute City from Brawl has some shreddy bits i like it in. Also some of the stuff from Dynasty warriors. Not that Metal but its got guitars in . Splatterhouse has a good metal soundtrack, gameplay can get a bit repetitive tho. Still Im always up for half an hour of bloody, metal-fuelled gameplay with porn as a reward...

Probably more rock than metal, but Shadows of the Damned was released today on Xbox 360 and PS3. A buddy of mine worked on this game.
