Especially Hangar 18 and Holy Wars. Both are classics.

Motorhead- Motorhead, Overkill (A special mention to the first one, it is one of the best solos of all time in my unpopular opinion)
Dissection- Where Dead Angels Lie (well, the lead parts that sprawl through the song are great as well)
I guess it doesn't count as a solo being at the entire track is instrumental but Steve Vai For the Love of God is pretty epic

Coroner - possibly the greatest 3 piece in Metal? They are SOOO fucking underrated.
Love any solo as the guitarists (Tommy Baron, Tommy Vetterili) had tune, technicality and was often fluid as fuck.
