Two racks of ribs going in the smoker right now. One doused in jerk seasoning.

For Christmas eve I'll be smoking a 37 day dry aged prime boneless rib eye roast.
 
Standing rib roast and deep-fried turkey here. Lots of side dishes too. Guests bringing desserts (at least one apple pie in the mix I hope :)). Have a happy and safe holiday everyone!
 
Italian here; all kinds of dishes ~ you name it!
For dessert - it's apple pie, banana, & coconut cream pies! :kickass:

Tomorrow it will be King Crab stuffed Manicotti. Mix the crab with egg yoke, fresh tyme, Asiago and Riccota cheese and fresh ground Nutmeg. Top the cotti's with an easy homemade Bushamel sauce.

Christmas dinner main will be a variation on Braciole. Pound down a good flank, thin as you can. Mix some ground Veal, lamb and some good ground beef with fresh Oregano, garlic, dry cheese of choice, S&P. Layer mix on flank with thin pancetta, Provolone, more herbs and a few whole boiled eggs. Roll and tie this bad boy.. Sear it up real quick and finnish it off in the oven, baked at 375 or so until you think it's done! Top it off with a simple red sauce or a Scaloppine type sauce...MMMM

Christmas morn is long variation on Eggs Benedict..
