If you like Ensiferum listen to Hordak, they blow them away. First album is alright but "The last European Wolves" is incredible. You might also want to try Suidakra's album "Caledonia," most of their other albums are more like terrible melodeath but Caledonia is viking metal..."Signs of the Fallen" and "Command to Charge" aren't quite as good as "Caledonia" but they're worth a listen, I guess.

BTW, I like Ensiferum but I can't fucking stand Wintersun. It's power metal, none of the old viking metal goodness or acoustic guitars...Just keyboard and synth line overloads.

dude, i won't recommend new bands to you, cuz i think the better way is to know all albums from the bands that you've already known. for example: cannibal corpse. you must listen to the 4 1st albums before listen to another death metal band.

Death's Symbolic is also good as well.

I recommend getting more albums from Bolt Thrower, Suffocation, Strapping Young Lad, Fear Factory and Hypocrisy. For Bolt Thrower, get Those Once Loyal and The IVth Crusade. Suffocation, get Despise The Sun, Souls To Deny, Human Waste and Effigy of the Forgotten. Fear Factory would be best suited with Archetype. No SYL collection is without City. As for Hypocrisy, get their older shit (first two albums), and avoid Catch 22 and The Arrival. Virus is awesome, though, so keep that.

As for new stuff, I recommend checking out the following:

Kataklysm (All of their stuff, their older stuff is chaoticly structured and has insane vocal changes, their newer stuff is more dynamic and more melodic, but keeps the heaviness)
Vader (Heavy as fuck death metal with epic elements, check all of their stuff out)
Agalloch (Folk metal band with very creative songs, nice relaxing songs, but also very complex and thought provoking. They are an entirely unique band. Pale Folklore, The Mantle and Ashes Against The Grain are their albums, and I hear their EPs are good as well)
Apocalyptica (One of the most unique metal bands around, and get this, they play thrash on violins. Truly captivating stuff, but avoid their newer stuff. Get Inquisition Symphony and Cult.)
Arsis (Melodeath done right, A Celebration Of Guilt and A Diamond For Disease are simply works of greatness)
Celtic Frost (One of the pioneers of metal itself, ranging from many genres such as Death Metal (Morbid Tales & Emperor's Return, To Mega Therion), Avant Garde (Into The Pandemonium), Glam Metal (Not Recommended) and Doom/Goth (Monotheist). Get everything except Cold Lake and Vanity/Nemesis.)
Dismember (Self-explanatory, all their albums rule. Like An Ever Flowing Stream and The God That Never Was are highly recommended)
Gorguts ('Nuff Said, get everything)
Mael Mordha (Gaelic/Doom Metal that definetly deserves your listen)
Scar Symmetry (Like Arsis, they do melodeath how it should be done. The vocalist has a great range)
Morbid Angel (Classic death metal, essential for every metalhead's collection. Avoid Domination, but get Altars of Madness, Blessed Are The Sick, Covenant and Heretic. I'm unsure about the rest of their work.)

That's pretty much it, feel free to go out and explore even more types of metal, it's a wide and vast genre, and that's what makes Metal awesome.

Well for starters your Slayer collection is seriously deficient. Get everything from 83-94.
