I am most partial to JSS - probably because he was the singer when I first heard Yngwie and started to like it. I've got a VHS of Rising Force Live 1985 and it's great to pop that in once in awhile!

Honorable mention goes to Mats Leven, since I think Facing the Animal was the best Malmsteen album.
