Symphonic Metal?

Apocalyptica has some fun tracks but there really isn't much 'symphonic' about them. They are just a metal band who play cellos as if they were guitars (atleast based on the little I've heard by them).
 
I remember thinking it was a cool concept when I first heard them...then I got bored because all they do is play cellos. I mean...how much fun can you have with one instrument.

If I want heavy, I'll go heavy...not cellos pretending to be heavy.

Not to mention my experience with them is only cover songs.
 
The best symphonic metal out there is Therion and Haggard. Lacrimosa is another favourite, but I wouldn't really consider them metal.
 
I don't think Therion is very good, but that's just me. It's like they have all the tools to sound great, but they just fall flat - way too simple.
